Kvarnen - Day 8
Hi family and friends! (And of course Hal!)
Today was the eighth day of our New Nordic trip, and we began the day in Copenhagen before heading to the railway station to board a train to Stockholm for the second half of the trip. After arriving in Stockholm, we were slightly delayed due to a fire that had occurred earlier in the day, but we were still able to make it to our dinner reservation for the night, which took place at Kvarnen.
Kvarnen is a sit-down dining experience in Stockholm where we sampled three dishes and were treated to seasonal drinks courtesy of DIS Copenhagen! The first course was a quiche dressed with salad and a sauce that we believed was lemongrass and dill. Dill was another common ingredient in Copenhagen, so it was intriguing to see its popularity continue in a new Scandanavian country. Following that, we tasted the classic Swedish meatballs with a rich brown gravy sauce, which were served with mashed potatoes, lingonberries, and sliced cucumbers. Below you'll find a picture of me starting the second dish and attempting to finish it; there was a lot of food!

Dessert, a passionfruit sorbet, was served as the final course. One thing I noticed was that the cream was white, as opposed to the yellow or purple tint typical of American cuisine. The New Nordic diet, like foods produced in Copenhagen, takes pride in using natural colors and no artificial coloring or flavors in their food products. Furthermore, as mentioned briefly above, some of the same flavors or elements were employed as they were in Copenhagen, such as elderflower in some people's drinks and rhubarb and cinnamon in my drink.
What a delicious way to end day 8! Here's to the next week in Stockholm and day 9!🍴
